Every once in a while I manage to come up with a recipe so good that I actually start to wonder how I’ve managed to live 21 years without having ever tried it. This is one of those recipes!
This dairy free whipped cream with berries dessert is incredibly easy to prepare. It takes you 10 minutes max. to make it, is healthy and tastes absolutely delicious. It’s the perfect dessert to serve on a hot day because of the refreshing frozen/cold berries part and at the same time tastes rich but not too filling – perfect!
Since I’m trying to cut back my dairy intake due to my lactose intolerance. It’s one thing to switch animal milks to nut or soya milks in your coffee but when it comes to baking yummy treats the whole things gets kind of tricky. I don’t have a problem with those healthy recipes. However, I wanted to come up with something also non-health-freaks would love.
All you need for this heavenly dessert is a package of frozen berries, a can of coconut milk* and some sweetener (honey, coconut sugar, agave syrup, honey… use whatever you feel like but try to stay away from refined sugar).
In order to prepare the coconut whipped cream store a can of coconut milk in the fridge overnight. This is essential because this will help the milk to harden. It is crucial to do this since otherwise all you’ll get is a watery mess that looks and tastes nothing like whipped cream. Once your coconut milk is ready you might want to put your mixing bowl in the freezer for 5 minutes too in order to cool it. This is not essential but I’d recommend to do it if it’s summer where you are :D
Ok so now let’s start. Flip the can of coconut milk upside down and open it. Now pour out the liquid layer of coconut milk on the top
(could be used for a smoothie later that day). What remains in the can is the hardened part of the coconut milk – this is what we’ll be using for the whipped cream. Scoop the cream in your cooled bowl, add some sweetener and start whipping until its fluffy. You might want to add some additional flavors such as vanilla extract to the mixture but as you can see if you try the plain cream this is not necessary. SO GOOD!
Now put some berries in a glass, add the whipped cream on top and enjoy! This is so good I can’t beliefe it is healthy and not made from dairy – I promise you will love this.
*Apparently you’ll need to check that your coconut milk is without “gour gum”
